easy as pecan pie

For Jess and Will's engagement party, we served desserts that honored both of their home states. For Jess, the New Yorker, it was cheesecake and black and white cookies. For Will, the southerner, it was pecan pie and banana pudding. I outsourced almost everything, but my mom insisted that pecan pie was easy to make, so I decided to go for it. 

Of course, mom was right. Lucky for me she was also in town, so we made it together. We used the basic recipe from the Better Homes and Gardens cookbook

Pecan Pie

1 frozen pie crust
3 eggs, slightly beaten
1 cup corn syrup
2/3 cup sugar
1/3 cup butter or margarine, melted
1 teaspoon vanilla
1 1/4 cups pecan halves or chopped macadamia nuts

1. Preheat oven to 350F. 
2. Combine eggs, corn syrup, sugar, butter, and vanilla. Mix well. 
3. Pour the mixture into the pie crust. Arrange the pecans on top of the filling. 
4. Bake for 45-55 minutes or until a knife inserted in the middle comes out clean.
