Like I've said, I don't cook often, so when I do I am disproportionately proud of myself.
Last night I made dinner and whipped up this kale salad to have with chicken burgers. I made the recipe up in my head after seeing similar things on menus. So, I apologize in advance if you're like "wah-wah not impressed," but this recipe was easy and delicious so I figured I would share.
1 red onion
1 head of kale
1/2 cup dried cherries
2 tbsp hemp hearts (or flax seeds or nuts)
2 tbsp olive oilDrizzle of balsamic vinaigrette
1. Chop the red onion into small pieces. Add olive oil to a large frying pan and cook the red onions over medium heat until they are soft.
2. Chop the kale into medium sized pieces, remove the stems. Once the onions are cooked, add the kale and continue to cook until the kale is bright green.
3. When the kale is cooked, take it off the heat. Add cherries, hemp hearts (or flax seeds or nuts) and drizzle with balsamic vinaigrette. Serve warm.
I bought the kale and onion when I was picking up the burgers, but we had everything else at home. Truthfully, I probably would have done pecans or some other nut, but all we had were hemp hearts (werido I know…from smoothies) and they were delicious.
Plus, dried cherries and balsamic basically make everything better.
It's perfect because you can eat it with dinner, but it's also great leftover. I highly recommend it with grilled chicken mixed in.
