I have been meaning to share my go-to breakfast for a while, and after a long weekend of relaxing with friends and family (aka not blogging) today seemed like the perfect day.
Several of my friends have been raving about this chia pudding recipe. When I looked at it I was surprised to see it looked a lot like the oatmeal recipe I have been making for years. It's easy, fast, healthy and completely customizable. So, here ya go.
1/2 cup oatmeal
a sprinkle of granola
1/4 cup dried fruit or 1/2 cup frozen fruit
a few nuts (I like almonds or pecans)
sugar-free vanilla almond milk
Fill a mason jar with the dry ingredients.
Pour almond milk over the dry ingredients.
Leave over night.
*If you're running late you can take make it in the morning and let it sit while you get ready.
