This winter has dragged. Which means I have continued to maintain a lower-than-normal activity level, while simultaneously indulging in comfort foods and wine. 


Last week I decided it was time to kick things into gear and focus on healthy eating. 

While I will never be someone who can sustain on juice alone (God bless you if you can), I can easily switch over into healthy eating mode. For me, that's lots of fresh fruit and vegetables, and less meat, dairy, and processed food. To top it all off, I throw a few fresh juices into the mix. 

I used to think fresh juice was pretty gaggy (official term), but I tried the recipes in Gwyneth Paltrow's It's All Good and I have really enjoyed them. Unlike hard-core juicers who replace a meal with juice, I use them as mid-morning and afternoon snacks. Better than a bag of pretzels or a cookie. 

Well, not actually better than a cookie. 

Here are two I recommend trying.

Beet Juice
1 large or 2 medium beets, washed and cut into chunks
2 large carrots, washed and cut into chunks
1 large apple, cut into wedges 
1-inch piece of fresh ginger (I used a little more for extra spice)
1 lemon, zest and pith removed

Combine in a juicer. If you don't have a juicer there are good step-by-step instructions on how to do it in a blender here

Green Juice
5 large leaves of kale, ribs discarded, leaves roughly chopped (or more, go nuts!)
1 lemon, zest and pith removed
1 large apple, roughly chopped
1-inch piece of fresh ginger (I used a little more for extra spice)
1 sprig of fresh mint

Combine all ingredients in a juicer. 

Breville juicer, inexpensive juicer, well priced juicer

I use the Breville Juice Fountain Plus. It's really well-priced in the world of juicers ($149.95 at Williams-Sonoma) and it gets the job done.

I also like to drink it out of these travel mason jars that I found on etsy ($8 each!). They're exactly the right size and I like that they're made of glass and metal. Super easy to clean and durable! They would be an adorable favor for a bridal shower or birthday party.
