Speaking of cooking, this is one of the recipes we made. Adapted from here.
3 Tbsp. soy sauce
3 Tbsp. honey
4 boneless, skinless chicken breasts, cut into bite-sized pieces (about 1-inch)
3 Tbsp. olive oil
1 bag of green beans (approximately 4/5 cups)
4 cloves garlic, thinly sliced
1 yellow onion
4 tsp. toasted sesame oil
1 tsp. toasted sesame seeds
Start cooking the brown rice as directed.
In a bowl combine the chicken, honey and soy sauce. Set aside.
Sauté the green beans with a little olive oil over medium-high heat for about five minutes. Remove from heat. Sauté the onions until they are cooked to your liking, about ten minutes. Remove the onions and put them with the green beans.
Add the chicken to the same pan (now empty) and sauté for about five minutes. After five minutes add the garlic and remaining marinade. Saute for another 2-3 minutes. Remove the chicken from heat and stir in sesame oil (I would use less next time).
Put veggies and chicken on top of the brown rice and garnish with sesame seeds. Enjoy!
