fall squash

Last weekend, we were invited to Blue Hill at Stone Farms for dinner. It is a true farm to table restaurant in Westchester, New York and let me tell you...if you ever get a chance to go, do it. The food was inventive and delicious, and the atmosphere was so charming, especially now that it's fall. 

Our first course was a collection of squash, and it was incredible. They were roasted and served with an array of toppings ranging from pepper, to shredded chestnuts, to bacon, to "pig parts." It was so fun to try all the different toppings. It would be great to serve as an appetizer at a dinner party. I was so inspired, I roasted my own squash Sunday night and am looking forward to having it all week.
