make this this weekend


...and eat it all week. 

This is almost a joke that I'm even posting a recipe (my oven didn't even work for the first three months I lived here), but I just had to share the wealth. This *almost* vegan oatmeal casserole will rock your world and simplify your weekday breakfasts. It's basically desert masquerading as health food. my fave.

The original recipe came from here. I took out some of the sugar, butter, milk and...well...you'll see. 


Dry Ingredients
3 cups oatmeal 
1 teaspoon baking powder 
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 cup chopped pecans
1 6oz package raspberries
1/4 cup chocolate chips (you could go dark and make it vegan, I only had milk)


Wet Ingredients
3 cups almond milk (I used vanilla)
1 banana mashed 
1 tablespoon vanilla extract


Toppings
1/2 cup chopped pecans
1/4 cup chocolate chips
1 banana cut in slices
1/4 cup blueberries 

Directions
Mix the dry ingredients in a bowl. 
Mix the wet ingredients in a separate bowl. 
Pour the dry ingredients into a greased (I used EVOO) 11 x 7 pan. 
Pour the wet ingredients on top, and slush it around. Add more almond milk as needed. 
Decorate with toppings. 
Bake at 375 for 35 minutes. 
I put mine in the fridge and cut a square out each morning. Zap it in the microwave for a minute and pour almond milk on top. DELISH.
