My parents went vegan a while back, so they are always trying all sorts of healthy and meat-free dishes. Some are hits, some are misses. Some are incredibly complicated (and call for unusual ingredients) and others are simple. Here is a simple one.
So simple in fact, that I can't believe I'm going to call this a recipe. It's basically two ingredients, one pot and 15 minutes. Aka, my favorite type of cooking.
1 bag of red lentils
1 or 2 packs of taco seasoning
Rinse the red entils. Put them in a sauce pan and cover them with an inch or two of water. Add the taco seasoning mix. Bring to a medium boil and stir occasionally. When the water is mixed in and the lentils have started to combine, you're done! Add to tacos, salads or dips. Take credit for making it at home.
